Broccoli Orange Salad

.1/2 cup broccoli florets cut small

.1/2 cup thinly sliced carrots

.1 cup oranges cut into small sections

.1/2 cup pomegranate arils

.2 cups arugula greens

.1/4 cup shredded mozzarella cheese

.1/4 cup sliced almonds

.1 Tbsp. honey

.1 Tbsp. lemon juice

.Salt & pepper to taste

Instructions:

In a large bowl add arugula, broccoli, carrots, oranges, and pomegranate. Toss gently with a fork.

In a separate small bowl whisk together honey and lemon juice. Add salt & pepper to taste.

Drizzle the dressing over the salad and toss. Sprinkle almonds and shredded cheese

Servings: Two

Per Serving: Calories 260, protein 10, fat 8, carbs 36, fiber 7, sugar 26

This salad has enough proteins and natural sugar.
